A classic vegetable and bean soup loaded with fiber from beans, whole grain pasta, and plenty of vegetables.
Heat the oil and cook the onion, carrots, and celery until soft, about 8 minutes.
Add the garlic and oregano and stir for a minute.
Add the tomatoes, beans, and broth and bring to a boil.
Add the pasta and simmer for 10 minutes, then stir in the kale and cook 5 more.
Season and serve.
